Sambal asparagus and steamed egg



We had simple yet appetizing lunch today.Steamed egg is one of my childhood favourite because my mom made the smoothest egg and sweetest broth I ever can taste.

Sambal asparagus

Preparation:
Clean and cut asparagus into 3cm length.
Grind 4 tbsp dried shrimps using food processor
4 tbsp cili boh
cut 3 shallots into small slices

Cook:
Heat oil and saute shallots
Add in dried shrimp and saute till fragrant
Add in aspragus and salt
Pour in cili boh and stir fry for 5minutes, add drops of water if too dry
Scoop up and serve hot

Steamed egg
Steps
1.Beat 2 medium-large eggs in a medium nice bowl that you will use for steaming later
2.In a wok, heat up 2 tbsp of oil.
3.Saute shallot slices and stir fry minced pork until brown and add 2 bowls (chinese bowl) of water.
4. Let the ingredients boil for a about 5 minutes to get a perfect broth for the steam egg later. Add adequate salt and pepper.
5. Remove wok from fire and pour in the broth slowly into the beaten eggs while whisking the mixture with the other hand.
6. Boil some water for steaming in a pot. Place the bowl of mixture into the pot and let the bowl sit in the water covering 3/4 of the height.
7. Let the mixture steam slowly for about 20 minutes.
8. Serve hot with rice

my mum always say, 1 egg + 2 eggs of water. can use the egg shell to measure the broth. mums seem to make the best steamed egg!

I use for than 2 eggs of water for sure :P still taste good
